The Northern Gold Coast has gotten a whole lot boozier with the opening of in Biggera Waters. The idea of White Oat Distillery was first conceptualised, strangely, over a beer. Three Gold Coast mates put their heads together to create a special space that’s not just about the drinks, but also about making connections, memories and all-around good vibes. Say hello to White Oat Distillery.
Step inside the nondescript shed doors and your eyes are immediately drawn to the impressive copper pipes which double as distillery equipment, seamlessly adding a touch of Gold Coast flair to the space. The sleek, contemporary interior is unlike any other distillery we’ve seen—think a wraparound pastel-pink counter contrasted by black accents, festoon lights suspended from the ceiling and long timber tables inviting you to sit down and share a drink with friends, old and new.
White Oat Distillery is a symbol of experimentation and this ethos resonates in every aspect of the gin distillery. Award-winning head distiller Tudor Duxbury uses modern twists such as adding oats to the gin distilling process, which add a velvety undertone to the drink. The distillery currently produces a plethora of sip-worthy signature gins, such as the London Dry Gin, Berry Pink Gin, Strawberry and Apple Sour Gin and the Mango Chilli Gin, which is the only one of its kind in Australia. Their innovative Barrel Age Gin Program showcases limited-release barrel-aged flavours, such as bourbon, maple syrup and shiraz, which are even more delicious than they sound.
Take your gin with soda or level up and order one of their incredible cocktails, like the More Tea Vicar, which muddles pink gin, camomile, grapefruit, ginger beer and thyme. If you’re not a gin drinker (we’re not judging, we swear) they’ve also got Balter and Captain Sensible on tap. White Oat Distillery regularly hosts live music and food trucks, so you can pair your drinks with finger-lickingly good bites. We’ll drink to that.
