 is a Surry Hills wine bar and restaurant by chef-owner Josh Raine (formerly executive chef of iconic Sydney restaurant Tetsuya’s, and the inaugural chef-in-residence at Canvas at the MCA) and head chef Michael Tran (from The Bellevue and Clove Lane). Both bring a strong background in Michelin-Starred English kitchens, and the result is a curated list of sophisticated, cleanly executed dishes with an air of casual simplicity. 

The space is intimate, embracing the kind of local wine bar venue that Surry Hills knows and loves. Elevated classics are central to the menu, which is constantly evolving based on seasonal produce and premium Australian ingredients. 

Inspired by their travels, Raine and Tran lean into Australian and European cuisine, playfully transforming nostalgic dishes such as their fish fingers with pil pil sauce, and cacio e pepe which features a cheesy foam in lieu of the usual heavy sauce.

40Res doesn’t overcomplicate things–their single-page is boutique yet accessible, highlighting winemaking integrity and terroir with labels spanning Australia and Europe. 

40Res encourages walk-ins and , with a laid-back, no ‘out-bys’ ethos. Whether you're in the mood for a quick glass of wine and a hearty meal (they assure there will always be a pasta or risotto on the menu) or a long evening of people-watching and share plates, 40Res asks you to grab a table, let your guard down, and unwind.
