Cadillac Supper Club Has Transformed Into A Lively Italo-American Pizzeria

The crew can do no wrong, and nothing affirms this more than the cult-like following of sister venue, , located on the former Scottish Prince site in Palm Beach.

Since opening in August 2024, Cadillac has made its mark with nods to Euro-inspired supper clubs and the neighborhood bistros of New York and Los Angeles. But after taking a step back and reflecting on what the venue was missing, the answer became clear: pizza.

Hospitality legends and the driving forces behind Cadillac, Mark Catsburg and Nick Stanton, ​​have completely reimagined the venue as an Italo-American pizzeria and bar, inspired by their love of pizza and the lively culture that surrounds it.

“We actually just really love pizza,” says Catsburg. “When we reflected on our favourite venues around the world, 90% of them were pizza restaurants—like Jones Hollywood, Rubirosa NYC, Robertas NYC, and Jon and Vinny’s LA. We had even subconsciously designed the fit-out to reflect a bunch of those, so the answer was kind of staring us in the face.”

The fitout blends rock’n’roll retro cool with intimate charm; step inside and you’re wrapped in warm, moody lighting, with rich wood panelling contrasted by black and white chequered tiles and burgundy booth seating.

Perch up at the intimate bar seating area, nestle into a booth or book the ten-seat private dining area, the walls lined with artwork hinting at a flair for the eclectic. Taking centre stage, the bar is well-stocked with bottles that promise cocktail craftsmanship, all beneath the watchful shine of a disco ball—ready to reflect the good times.

With the team boasting a seven-year history of building cult-favourite pizza spots—including and Leo’s Pizza By The Slice in Melbourne, in Bangalow, and  in Coolangatta—it seems meant to be that Cadillac would follow suit. And when a Marana Forni pizza oven became available, the way forward was clear.

At the heart of it all is Cadillac’s dough—a 24-hour fermented sourdough, hand-stretched to order, with a texture leaning towards the New York style. “It’s thin and crispy with the right amount of bubbles and burny bits on the crust that make all pizzas unique,” explains Catsburg. The dough recipe is an evolution of Bar Evelyn’s, which in turn was born from , creating something entirely new in the process.

The menu is a mix of classics and creative twists, featuring both locally sourced ingredients and imported specialties. The American cup-and-char pepperoni is a long-searched-for highlight, while the pickled zucchini with stracciatella and a sweet-and-sour chilli concoction is a wildcard that has the potential to become a classic in its own right.

The hot honey and salami pizza is another must-try, alongside ever-evolving small plates and fresh pasta dishes like their signature vodka sauce pasta. And let’s not forget dessert—Cadillac’s tiramisu is a non-negotiable. Takeaway is available, and the team has plenty of exciting plans ahead as they continue to grow.

Beyond the food, Cadillac’s transformation brings a whole new energy to the space. “[Pizza] brings families and friends together to share dinner, drinks and conversation.,” says Catsburg. “The vibe in the dining room becomes more relaxed, the music becomes more relaxed…We wanted to create a neighbourhood supper club atmosphere where the staff and the people who visit can feel at home and feel free to have a good time.” We dig it.

The bar program has also evolved with the new concept, leaning more heavily into Italian influences with an extensive wine list and a refined cocktail selection. But one thing hasn’t changed—Cadillac still holds its roots as a late-night venue, with vinyl-spinning DJs setting the mood well into the night.

This is just the beginning for Cadillac’s new era, and with the team’s proven track record of creating cult-favourite venues, we think you’re about to be hearing a whole lot more about Cadillac.
