Once a buzzy late-night CBD pub, Jacksons on George has entered a shiny new era as a three-storey dining and drinking precinct—complete with a beaming rooftop bar, a Euro-style bistro, and a casual public bar.
The reimagining of Jacksons on George was dreamt up by legendary Sydney restauranteur Maurice Terzini and Michael Broom's DTL Entertainment Group (DTLE).
"Great food and drinks intersect with contemporary art and music across all three levels to create a vibrant, contemporary venue," says Terzini.
Heading up food across each level is Steven Sinclair. As well as Icebergs Dining Room and Bar, Sinclair brings experience from Michelin-starred restaurant L'Enclume.
As for what to expect at each of the three venues, "Bistro George" will have a Euro vibe, serving clams casino, fancy steaks, and an amaretto crème caramel for dessert.
The Bistro will carry the flame of Jacksons on George's late-night days, flipping into a supper spot with live jazz after 11pm on Fridays and Saturdays.
Under Jacksons on George's striking white "veil", the rooftop will follow an al-fresco aesthetic, with an elevated menu to match. Think slow-cooked duck sausage rolls and Moreton Bay bug buns alongside larger plates like gin rigatoni, spatchcock cotoletta, and house burgers served on Martin’s Famous Potato Rolls.
For a rooftop dessert, it's a signature Jacksons banoffee sundae, with banana ice cream, caramel and chocolate sauces, whipped cream, and caramel nougatine crisp.
The ground floor "Public Bar" menu mirrors the rooftop, with some extras available for time-poor city workers, like a grab-and-go cabinet with takeaway meat pies, baguettes, and an LP's grilled sausage roll on white bread with house-made ketchup.
To drink, Bar Manager Sam Kirk has collab'd with Re's Matt Whiley to create some signatures like a Negroni will pandan and blanco tequila and a Daft Punk-inspired party-starter called "Up All Night To Get Lucky", which features bitter coffee, peach, and pineapple.
This is Sydney in 2023, so at Bistro George, you will find a Martini trolley with four Martini-styles to be shaken or stirred tableside.
Jacksons on George is the centrepiece of the Sydney Place dining precinct, which so far features a second outpost for Lode, Kosta's Takeaway, and Besuto.
The Public Bar is open daily from 10am to late.
The rooftop is open every day from 12pm - 12am.
Bistro George is open daily from 12pm to 11pm.
On Fridays and Saturdays, Bistro George transforms into a late-night bar with supper, from 11pm to late.
