On the ground floor of Paddington’s Oxford House hotel, Busby’s is a moody natural wine and record bar with a seasonal aperitivo menu.
The wine list, curated by Mike Bennie of P&V Merchants, spans Australian, French and Italian natural wine producers, and sits alongside a cocktail list crafted by Maybe Sammy’s Paolo Maffietti that focuses on highlighting individual ingredients with a refined and minimalist approach.
To pair with drinks, Public Hospitality’s culinary creative director Clayton Wells and head chef Brendon Bullock’s menu of share plates covers seasonal takes on bar classics, like tuna tartare with grilled watermelon and kefir cream, chicken liver parfait with spiced pineapple and liquorice, and more substantial dishes like heaping plates of pasta for late-night bites.
Inspired by some of the world’s leading vinyl bars like Bambino in Paris, Bar Sway in Berlin, Gold Line in L.A. (and Ante in Newtown, we might add), the weekly lineup at Busby’s looks like five-hour residencies on Thursdays, iconic local selectors on Fridays, and full play-throughs of the world’s greatest vinyl albums on Saturdays.
Busby’s will open on Thursday 2 November.
