Bar Conte is an ode to our favourite neon red cocktail and Count Camillo Negroni who, as legend has it, invented the Negroni while trying to make his Americano a bit boozier at a London bar at the dawn of the roaring '20s. 

Bar Conte's co-owner Raffaele Lombard counts himself among them; a dedicated Negroni and aperitivo bar for Sydney has been a dream of his for over a decade.

"The Negroni is my drink of choice," he explains. "It's bitter, strong, and clean—the ultimate pre-dinner drink. We felt it deserved its own dedicated bar.”

At Bar Conte, you'll find more than 20 Negroni variations, made with top-shelf Australian and Italian vermouths. Begin with the Count's OG concoction, the Negroni Classico 1919 made with Campari, Cinzano 1757, and Tanqueray.

When you're ready to advance your love of the bright red drink, there are whisky and bourbon Negronis, there's a mezcal Negroni, a chocolate Negroni, and even a vibrant blue Negroni with Malfy Gin, Americano Cocchi, and blue Curacao. Beyond the Negroni, you'll find a hit list of classic spritzes, cocktails and Italian vino.

The food menu by head chef and co-owner Steven De Vecchi (ex The Apollo) is all Italian favourites, like burrata Caprese with heirloom tomatoes, a few pastas (we love the lamb ragu pappardelle) and a Negroni tiramisu for dessert. On Thursday, Friday and Saturday nights the kitchen stays open well after 9pm, with last orders at 11.15pm for night owls chasing a late-night feed.

Earlier in the day, the cafe starts serving coffees, pastries and sandwiches served on house-made focaccia, filled with Italian deli staples like ham, roasted artichoke, olive crumb and scamorza from 7.30am.
