Ammos Brighton is a waterfront Greek restaurant in south Sydney with a saganaki station, roving ouzo trolley, and Aegean-esque ocean views that more than satiate Euro summer cravings.

It’s another Greek venue from chef Peter Conistis, who’s considered a pioneer of the cuisine in Australia, reimagining Greek dishes with a modern touch and using top-tier produce from Greece and Aussie soil. Executive chef James Roberts (who’s long worked alongside Conistis in Sydney venues like Omega, Alpha and Ploos) leads the team, which is scattered across the main kitchen plus a dedicated seafood station near the restaurant’s entry and a and mezze station at its heart.

The menu kicks off with an extensive selection of snacky mezze dishes like grilled pita and dips, Greek-farmed Ossetra caviar with Hellenic garnishes, Australian and Greek cheeses and smallgoods (like pastourmas with whipped feta and candied olives), and baked and fried plates.

Larger picks are fire-roasted whole lobster with a la Greque butter, King George whiting with ladolemono and fried vine leaves, and an entire lamb menu with shoulder, pot-roasted neck with moussaka flavours, rump and sirloin cuts, plus a Sovereign Lamb tomahawk with celeriac skordalia and lemon.

Loukoumades—a must-have on any good Greek table, in our eyes—come with spiced honey and halva ice cream, while other desserts include galaktoboureko custard pie with poached quince, and a selection of traditional Hellenic sweets.

As well as the roving ouzo trolley for after-dinner drinks (or before, if that’s your style), Ammos Brighton’s wine list contains plenty of Greek producers (they make up 25% of the list), plus Greek varieties produced in Aus.

From its position on level three of the Novotel Sydney Brighton Beach, Ammos Brighton has ocean views and a spacious terrace for dining with a sea breeze.
