Pasta master Alessandro Pavoni (who wooed Sydney with Ormeggio at the Spit) is behind a’Mare—a refined Italian restaurant by the water in Barangaroo.

Expect impeccable service, a luxurious two-storey interior, and a masterful take on simple Italian food using the best seasonal Aussie produce. The significant bar program offers premium Italian and Australian wines, cocktails including a signature martini menu, and amaro and aperitivo sips.

The menu spans luxe snacks like caviar-topped maritozzi buns, classic starters and antipasti like vitello tonnato, seasonal pasta dishes, meat and seafood main dishes, sides and dessert, including the must-order tiramisu served directly from a massive tray to your plate.

While the Italian authenticity shines through, a’Mare is extremely dietary-friendly, with plenty of gluten-free dishes and alternatives on the regular menu, a childrens offering for lucky under-12s, and dedicated vegetarian and vegan menus.

If you’d rather leave your decision-making at the door, a’Mare does two set menus: the a’Mare Classic Experience for $146pp and the a’Mare Luxury Experience for $198 per person, with various seasonal specials and menus often part of the lineup as well.

Tableside elements like the martini or Negroni cart, the pesto of basil, macadamia and pine nuts ground up to top trofie pasta, and fior di latte gelato topped with your picks of various toppings provide a sense of personality and Italian hospitality.

For more casual affairs, a’Mare has introduced a’Mare Cucinetta; a revamped option in its dedicated bar space. The laid-back, approachable osteria serves Italian snacks, pastas, mains and desserts until midnight daily, with shared antipasti picks, roasted fish of the day, hearty Wagyu bolognese busiate, and access to the restaurant’s full wine list.

Bookings for a’Mare are strongly recommended, and walk-ins are welcome at a’Mare Cucinetta.
