Big news, Sydney—a brand new bottomless brunch has arrived to rival some of our city’s best boozy breakfasts. If your ideal brunch involves a superstar chef, a stunning setting, free-flowing bubbles, live music, and Bloody Marys paired with a perfect degustation-style menu—you’ll want to add Saturdays at Margot’s to your weekend agenda.

You’ll find this all-star brunch event at the new , housed within the just-opened five-star hotel. Kimpton Margot is the first Kimpton hotel to open in Australia, taking up residence in the former Sydney Water Board building on Pitt Street.

The grand Art Deco stunner has been lovingly restored by the Kimpton crew, and the breathtaking foyer—complete with crimson Scagliola pillars, fresh botanicals, plush velvet loungers, and a gin-inspired fragrance—makes for a very dreamy backdrop to your brunch.

Sydney brunch veterans will be familiar with Luke's Kitchen—and, of course, beloved Aussie chef and restauranteur Luke Mangan. At Kimpton Margot, Mangan has brought the best of Luke's Kitchen back to life, including his much-loved Saturday brunch and famous Bloody Mary trolley.

Dubbed Saturdays at Margot's, you and your brunching buddies will be treated to a five-course degustation ($85 per person), kicking off with Spencer Gulf hiramasa Kingfish sashimi and prawn toast with Tasmanian wild-caught spanner crab meat salad. Then, it's eggs benedict with prosciutto and crushed mint peas, and roast spatchcock with fennel purée. For dessert, tuck into soft Swiss-style lemon meringue.

Vegans are also well looked after, with a dedicated five-course menu of their own ($85 per person), which features spiced roast cauliflower with black bean tabbouleh salsa, pan-fried potato gnocchi with summer vegetables and truffle dressing, grilled vegan halloumi, and more.

As for the free-flowing drinks, you'll be able to choose from sparkling (Veuve D'Argent Blanc de Blanc Brut) and rosé (Triennes Rosé Provence). We highly recommend kicking your brunch off with a bang from the roving Bloody Mary cart—your brekky cocktail will be made-to-order tableside, complete with your choice of fresh garnishes.

"We cannot wait to bring Sydney’s Saturdays back to life with Saturdays at Margot's—think live music, moving between the restaurant to the bar to lounging by the lobby, all the while enjoying the bottomless brunch menu designed by Luke Mangan," said Kimpton Margot Sydney General Manager, Bruce Ryde. "Kimpton is bringing back Saturdays in Sydney and we can’t wait to get the party started.”
