Start locking in your chicken shop dates, 'cause the crew behind Northbridge icons The Bird and Ezra Pound have just unveiled their new direction for the former North Bird space on William St—a dedicated Nashville hot chicken joint called South Bird.
The casual American-inspired diner isn't exactly what we expected considering the boutique wine oasis that previously filled the space, but it's an idea that co-owners Kabir Ramasary and Braeden La Marr have been throwing around for years. Ramasary in particular admits to having a passion "bordering on obsession" for fried chicken, so he took the recipe development very seriously.
The pair committed to eating almost solely fried chicken for a whole month straight—trying to nail the perfect balance of flavour, spice and crunch. Together with Head Chef Frankie Dawson (North Bird, Besk, Bivouac, La Madonna Nera), they've landed on a Nashville riff with a signature crisp coating, served with pickles on a slice of white bread.
Round out your meal with other Southern comforts like mac and cheese, hush puppies, crack salt fries, slaw, buffalo cauliflower and potato gravy. If (when) things get a little too hot n' spicy, you can go for the homemade iced tea or something a little naughtier, with tap beers, cocktails and a cracking natural wine list handpicked by esteemed sommelier Daisy Case (Fleur, The Standard, The Royal).
"We are still refining the menu continuously so it challenges and comforts in equal measure," says La Marr. "And that’s really what the whole South Bird brand comes down to—it’s fun and earnest, with a hint of mischief and spice.”
"We wanted something a little playful, and a little serious, and a little naughty."
It's not all about food and drink here, though. Like Ramasary and La Marr's existing venues, great music will underpin the experience, with jazz, blues and hip-hop setting the South Bird vibe.
“We want people to come for the fried chicken and stay because they are having a good time," says Ramasary. "It’s all about the experience.”
South Bird officially opens at 175 William Street, Northbridge on Monday 15 April.
