All you have to do to secure this delicacy of the sea is call up a local fisherman and organise where to meet him when he's back from his daily catch. Bridger's a firm believer that meeting the farmer or fisherman who's caught or grown your produce helps you form a connection with your food that you can’t get from the supermarket.

Undergoing the ultimate glow-up, this tin shed turned gourmet shop is a true standout in the local premium food game. If a wine and charcuterie night is pending, this is your new go-to. Picture a spacious, modern market space filled with an array of beautifully displayed delights. Bridger loves their freshly baked bread, small-batch olive oils and handmade choccies.  

"What I love most about a Saturday spent at Market River's Farmers Market, is that I always walk away with a new learning about produce from one of the chatty vendors."

Just off the Bussell Highway, you'll find these iconic farm-to-table markets in the heart of Margaret River. With a range of unique offerings up for grabs, Bridger’s bag of goodies always includes some pasture-raised meats, local cheeses, and an abundance of organic fruit and veg.

"Bunbury Farmers Market is what I like to call an edible IKEA."

Although this lively tapestry of local cuisine might not have Ikea’s world-renowned meatball offering, when it comes to stocking a variety of fresh ingredients, Bunbury Farmers Markets takes the cake.  Having become Bridger’s favourite nostalgic stop off on his travels south, the clever chef admitted to always leaving with a trolley jam-packed with goodness. 

 “Since I was a kid I've always loved a trip to the Fremantle Markets, it has the best bustling and local vibe."

Another produce haven for Bridger is none other than the stalls of the long-serving . Housed within a historic Victorian-era building, walking into Fremantle Markets feels like stepping into the perfect mix of old and new. From fresh produce and gourmet foods to unique handmade crafts, artwork, fashion—and the very best in vintage—there's something here to please every stall browser. 

Bridger has found that a smile and a good question can go a long way when it comes to chatting with local vendors. For his efforts, he often leaves with a box stuffed with some extra Asian veg or local fruit to keep him going. 

“I love an honesty box for so many reasons. It's cheap, fun, and brings me back to what food is all about."

Every Aussie has a memory of driving in the country and stumbling across a row of fresh farm eggs with a scribbled sign that reads ‘Honesty Box', and Bridger is no exception.  

He's known to detour on a road trip home to find a random honesty box and stock up on citrus, stone fruit, and anything he can find. He's also a firm believer that apples from an honesty box are how apples are supposed to taste.
