The Verdict

Formerly located on Toorak Road, has since shifted to Chapel Street along with head chef, Stephen Nairn (Yügen Dining) still at the helm. The bistro and bar takes pride in serving an elevated selection of drinks and expertly crafted bistro classics that embrace a contemporary touch. 

Despite a few minor variations, the new menu remains true to its origins with a European brasserie-style menu that sources only the best seasonal produce and showcases it in flavour-forward dishes like whole flounder served with beurre noisette (burnt butter sauce) and lemon as well as steak frites with a rich Béarnaise sauce.

Stephen is also joined by Head Chef Evin Doherty, together, they’ve ensured that every dish is elegantly executed with close attention to detail, placing diners in good hands. The duo have come together with a range of different Euro-centric favourites, including a succulent confit duck leg that is soaked up with a honey marinate which is then cooked until golden brown and accompanied by rhubarb and pistachios, adding a crunch element. 

The restaurant expresses its appreciation for wine through its ample selection of cellar gems that span from a hearty Shiraz from the Barossa Valley to Chablis, straight from France, as well as signature cocktails with unique twists such as Negroni infused with saffron and digestives, Limoncello Meringue and Lamington Espresso. 

Omnia’s new interior pays homage to a traditional European design with its artisanal trolleys that feature a variety of delicacies, from cheese to champagne while turning heads with its elegantly mirrored roof and dispersed brass that compliments the sophisticated green marble bar centre piece and hanging greenery which welcomes the luminous, well-lit space.

Omnia’s precision is further reflected in its stylish tableware that ensures an atmosphere that is inviting, refined and valued.
