Chopsticks, Hands & Napkins Needed For Tombo Den’s Infinitely Snackable Menu

You'll need chopstick skills, but don't be afraid to use your fingers as well at , the funky fresh new Japanese diner by Chris Lucas, the genius behind Chin Chin and the Lucas Restaurants empire. 

Moving in next door to Hawker Hall,  is wild: upstairs there's kooky AI-generated art, moody (and fluffy!) bench seating and a cavalcade of itty bitty sushi bites served up in front of your eyes at a downstairs sushi counter.

Food-wise, head chef Dan Chan, ex-Yardbird (Hong Kong) and Supernormal has put together an infiinitely shareable menu, ranging from those little sushi bites to big playful plates like sticky soy glazed beef ribs done on the hibachi and served with lettuce and shiso leaves to wrap up and chomp on. Other dishes like the charcoal chicken thighs with pickles, sesame crusted tuna and little snacks like Sapporo flatbread with wasabi cream fly out the pass.

It’s somewhat reminiscent of Chin Chin’s super-shareable snacky options with sweetcorn fritters with bonito flake on top making the perfect sweet-and-savoury combo and a stack of handrolls; spicy toro tuna with cucumber and tempura flakes, or kingfish ceviche with avocado and shaved kombu which are worth a second order.

The offering lands somewhere between Yakimono and Kisumé—not as riotous as the former, and not as fancy as the latter. Lucas said the inspiration comes from his time living in downtown Toyko and the venue is named after a little diner he used to eat at after work.

“I would eat delicious street food almost every day and use that to practice my pretty average language skills,” he jokes, “I can’t wait to bring a slice of (that) to the area.”

Like any good Windsor venue, the space is geared for groups with private dining spaces on offer, fitted out with karaoke and a ‘design your own cocktail’ experience.

Naturally, Tombo Den will have a strong cast of sakes with ex-Society somm Yuki Hirose leading the charge. It’ll follow the same accessible ethos as the food with drinks available by the glass and 350ml carafe.

Lucas is on quite the roll this year. We’ve seen him move new digs into Geelong and , we already know Batard is on its way, and now we have Tombo Den on the infamous Chapel Street.

The futuristic, Tokyo-inspired, late night izakaya, sushi spot and sake bar is set to open on 7 September (with bookings now open, get your table ) joining a slew of new spring openings
