The Mud Crab Menu
At the heart of Spice Temple’s menu is a focus on celebrating regional Chinese cooking—and nothing is more important than fresh ingredients. The restaurant’s mud crabs are bought live from Queensland and cooked to order.
Under the expertise of Exec Chef Andy Evans, the crustaceans are then delicately steamed to keep their flesh tender and tasty. Finally, they’re presented alongside one of five traditional Chinese sauces—think four chillies, salted olive and black bean dressing, black bean and salted chilli, ginger and shallot and a classic XO sauce. Served with a banquet of dishes, mud crabs make a dramatic—and extremely photoworthy—table centrepiece.
Summer Seafood
As summer heats up, Spice Temple’s live seafood tanks are taken over by Blue Swimmer Crabs and Snow Crabs—both masterfully prepped and cooked with traditional Chinese flavours, alongside a seasonally rotating mix of seafood including lobster and pipis.
