It’s official—after a brief moment of despair that Brisbane was going to lose one of its most iconic restaurants earlier this year, Montrachet is back, with a new French-born chef owner at helm, Clément Chauvin. Swooping in to save the French institution (which is certainly no stranger to change—who remembers when it was in Paddington under Thierry and Carol Galichet?) from closure, Chauvin has moved up from Canberra, where he owns the award-winning Les Bistronomes—so safe to say, Montrachet is in good hands.
While those stunning old-world interiors of exposed brick, globe lighting and red leather seating haven't changed, the menu has certainly evolved, with Chauvin bringing his own decades of experience (including being named Best Chef of The Year by the Australian Hospitality Awards not once, but twice) to the table. Before you panic though, don’t worry—that famed double crab souffle isn’t going anywhere.
Joining it on the line up of classic and contemporary French dishes are the likes of Le Duo D’agneau de Printemps (spring lamb two ways), Le Pithivier (roasted pumpkin and mushroom pie topped with sage and brown butter crumble), and a hearty Le Boeuf-en-Croûte (beef Wellington with a red wine jus). For dessert, Chauvin’s signature Soufflé à la Passion—a passionfruit soufflé with a chilli explosion and coconut sorbet—is an absolute must.
