A restaurant on wheels may not sound particularly sophisticated, but , a 12-seater degustation eatery from the team behind Fortitude Valley's now closed Casa Nostra Ristorante, is exactly that. Da Biuso is housed inside a converted school bus, and is the only mobile fine dining venue in Brisbane—so you’ll want to snap a booking.

Don’t worry, you won’t have to wear seatbelts or worry about your wine glass tumbling over—the restaurant doesn't move during service, but it will does to new locations throughout the year. Currently you’ll find it at Bretts Wharf in Hamilton, its second location since launching, a breezy and relaxed riverside spot for an exquisite meal—and handily central so you can take advantage of their surprisingly lengthy wine list. They're also available for private functions at any location—can you imagine this in your driveway for your next dinner party? 

While there’s no hiding that Da Biuso is a bus from the outside, inside you’ll feel as though you’re in a glamorous, old world train dining car—pop a martini in your hand and you could be on a 1930s train trip across the continent. Sheer drapes cover the windows, golden glass lamps provide moody lighting and white leather seats set around the tablecloth covered tables, while a tiny bar and wine cellar have been squeezed in at one end. 

Co-owner and Head Chef Biagio Biuso (the name of the restaurant literally means to “to go to the Biuso’s”) has crafted a six-course Mediterranean-inspired degustation that takes simple dishes and elevates them with unique flavour combinations and fresh, seasonal ingredients. The menu will change regularly, but right now you can expect dishes like cured ocean trout served with a lemon mustard sauce, green herb oil and mini courgettes; risotto with carnaroli rice infused with pickled beetroot juice and veal ossobuco; and corn fed chicken served with an Etna Rosso sauce, sugarloaf cabbage and a chickpea polenta.

Biuso’s son Joseph is with him in the kitchen, while his wife and co-owner Sarah will take you through the wine list as sommelier. Matched wines are an option, or you can take your pick from the carefully curated selection of Italian drops. There’s also a handful of classic cocktails, with several using the Brisbane-made Winston Quinn Gin.
