Here鈥檚 Everything You Can Eat And Shop At Sydney鈥檚 Huge New Hay St Market

With almost 50 stalls serving 25 cuisines, the multi-million-dollar, 3000-square-metre is Sydney’s newest foodie destination in the heart of the Paddy’s Markets inside Market City in Chinatown.

Trading until late seven days a week, the combined retail and fully licensed dining space in Haymarket is a Sydney-first concept hosting street food stalls, local seasonal produce, master providores, florals, specialty retail and more.

It's a bare-bones space stretching out from the Paddy's Markets everyone knows and loves, with each stall decorated and styled like you're on a cross-cultural film set, with various seating areas surrounded by eclectic decor, and a Korean pocha stall-style dining area.

Hay St Market: The Food

Have a craving? You’ll find the fix being cooked up among Hay St Market’s food stalls, which span sheftalies and loukoumades at Nico’s Cypriot Chargrill; sushi, sashimi and an oyster bar at The Fish Co; Euro deli goodies like tinned fish at El Mercado Spanish Deli and Mika’s Deli; and Mexican favourites at Taco Nixtamal, with The Health Lab balancing things out with seasonal salads.

More indulgent picks include smashed burgers from Burger Box; 11-hour-smoked beef brisket pies from Sydney market scene favourite Broomfields; gozleme and shawarma from GozleME and Najla’s Lebanese Street Food; and carby and cheesy Italian classics at Pasta E Basta and Pizzarina.

For sweet treats, hit the piped-to-order cannoli at Biaggio Coffee, or pastries and baked treats from Thomas Hay Bakery and Paddy’s Patisserie.

Beloved Aussie/Vietnamese chef Luke Nguyen operates three separate stalls, serving up his father’s pho recipe at Pho Chu Lap; Singapore chilli crab or laksa dumplings at Luke Luk Dumplings; and regional takes on banh mi at Madam Banh Mi, including a Wagyu brisket bo kho-inspired roll.

Joining Luke is renowned Indigenous chef, presenter and restaurateur Mark Olive, who’s drawing on native flavours at Little Midden with seafood dishes like smoked blue gum barramundi and bell pepper skewers.

Hay St Market: The Bars

Two unique bars round out the on-premise offering at Hay St Market. Cans & Crates is a casual spot with crate seating dedicated to sips that come in tins, with over 180 canned drinks from around the world spanning cocktails, beers, RTDs and booze-free picks from Australia, Japan, Italy, Korea, Mexico, and more filling the fridges.

At the central Traders Bar, old-school cocktails are whipped up alongside craft beers and wines from favourite Aussie regions, with bar and booth seating where you can perch with your food picks.

Hay St Market: The Shopping

On top of the ready-to-eat offering and various delis, Hay St Market also hosts a range of specialty providores and traders, centred around the large Signorelli Bros greengrocer. There’s the Love Me Tender butcher (led by Tim Casey, the former head butcher at Rockpool), and The Cheese Table, with a selection of international cheeses and accompaniments picked by cheesemonger Christina Murphy.

More retail offerings include a florist, an innovative operation called Urban Farm growing microgreens in the middle of the Hay St Market, and The Goods: a charming retailer stocking homewares, crockery, decor and more.
